Hi Wendy,
I suggest that Jesse travelled separately from wife and son. I looked at
outbound indexes.

Mary and son James are shown outbound from Liverpool Oct 11 1912 on ship
Belgic of the White Star line. Port of arrival given as Melbourne. Jesse is
not with them.

Jesse is hard to find. The only possibility I see is a J. Carlton leaving
for Melbourne Australia on Dec 27 1911 on the ship Maunganui of the White
Star line. Port of departure was Glasgow. He is described as traveling
without wife and occupation "fitter". Age is not given. 

I don't know if it was feasible to go to Glasgow from Lancashire for a ship.
Anyway, these are possibilities.
